The good news: keeping your wood cutting board gorgeous through summer takes about ten minutes a month and a couple of habits you can adopt today. Here’s exactly what to do (and what to never, ever do) to make sure your board makes it to September looking as good as it did in May.

Why Summer Is Tough on Wood Cutting Boards

Wood is a living material. It expands when it absorbs moisture and contracts when it releases it. The faster those swings happen, the more stress builds up inside the board — which is exactly how cracks, warping, and splits start.

  • Humidity swings — Air conditioning indoors versus humid outdoor air creates rapid moisture cycling
  • Direct sunlight — A board left on a sunny counter can lose moisture fast enough to crack

None of this is a reason to use your board less. It’s a reason to care for it a little more deliberately. Here’s how.

The Three Habits That Solve 90% of Summer Board Problems

1. Oil it before summer really starts

The single best thing you can do in late June or early July is recondition your board. A generous coat of food-safe mineral oil or board cream, applied with a clean cloth, soaks into the wood overnight and creates a moisture barrier that helps the board handle the season’s humidity swings.

Apply oil, let it sit overnight, wipe off any excess in the morning. That’s it. Once a month through summer is plenty for a board in regular use.

2. Hand-wash with warm water — never let it soak

The dishwasher is the fastest way to destroy a wood cutting board. So is leaving it sitting in a sink full of water. Both saturate the wood from one side faster than the other, which creates the uneven swelling that leads to cracks.

The right move: rinse with warm water, scrub with mild dish soap and a brush or sponge, rinse again, and dry both sides immediately with a clean towel. Total time: under a minute.

3. Store it upright, with airflow on both sides

A board lying flat on a counter or stacked under other items can’t breathe. One side dries while the other stays damp, which causes warping. Store boards upright in a rack, leaning against a backsplash, or in a cabinet with dividers so both sides get air.

This single habit prevents more board warping than every fancy oiling technique combined.

What to Do With a Board That’s Already Looking Rough

If your board is heading into July with light cracks, dryness, or that gray-ish hazy look, all is not lost. Here’s the rescue routine.

The deep-conditioning treatment

  1. Sand lightly with 220-grit sandpaper to remove surface grime and shallow scratches
  2. Wipe clean with a damp cloth and let dry completely (a few hours)
  3. Apply a heavy coat of food-safe mineral oil. Let it soak in overnight
  4. The next morning, apply a coat of board cream (mineral oil + beeswax). Buff to a soft shine
  5. Repeat the oil-then-wax routine in a week. Then once a month after that

  4. Setting it on a hot grill ledge. Direct contact with grill-grade heat scorches the surface.
  5. Cutting raw chicken without a separate plastic board. Not because it ruins the wood, but because the deep cuts that hold bacteria are harder to sanitize on wood. Use a dedicated plastic prep board for raw poultry.

A Quick Word on Charcuterie Board Care

If you’re putting out spreads all summer, your charcuterie board is doing double duty. After each use: wipe with a dry cloth first to remove any oils from cheeses and meats, then wash with warm soapy water. Oils that sit on the surface attract grime and dull the finish.

Once a month, rub a tiny bit of food-safe board oil into the surface to keep the wood nourished even after frequent serving use.
